"My Dragonborn" never retires entirely. He just sometimes wandering across Skyrim doing generated quests from towns and guilds (like a Witcher, some kind of), keeping Skyrim safer, and if not, make trade routes, selling his self-made enchanted weapons and stuff and buys materials to create some another ones. Also sometimes he just forges all sorts of armor and weapons just for fun, creates from them sets of heavily modified gear for himself, just like "MMO games skins". And at last, very rarely, but still not never, my ol' breton make pilgrimage to visit this or that shrine or High Hrothgar specifically to meditate and pray for peoples of Skyrim and atone his sins.

I remember when I first did Whodunit? I wished I'd made a save so I could go back and murder them in a different order, just to hear additional dialogue. Easily the most fun quest in Oblivion, in my opinion.

I really tried for a while to play skyrim on legendary. Even with mods it's just not very fun. You can spend 10 minutes fighting a room of draugr only to get one-tapped by the one left. The victories never felt very good. I honestly think Expert is the most fun of the difficulties. I'm also speaking in terms of not abusing the restoration/enchanting loops. That would probably make everything very easy regardless of difficulty but I don't think that's fun either.
